SCOBY Fruit Leather

SCOBYs—short for Symbiotic Culture of Bacteria and Yeast—are the “mother” of kombucha and the source of many of its health benefits. While they may look unusual, SCOBYs are packed with healthy bacteria and insoluble fiber that help the body remove waste. They carry the same benefits as kombucha, but in a more concentrated form.

With each new batch of kombucha, your SCOBY grows. Before long, you may have more than you know what to do with! Instead of tossing extras, you can preserve them, share with friends, or repurpose them into something delicious… like homemade fruit leather.

Supplies + Ingredients

  • 2 cups pureed SCOBY

  • 2 cups fruit (fresh or frozen)

  • ¼ cup sweetener (maple syrup, agave, or sugar)

  • ¼ cup kombucha (optional, for thinning)

  • Blender

  • Dehydrator or oven

  • Baking sheet

  • Parchment paper

Instructions

  1. In a saucepan, cook the fruit and sweetener over medium heat until the fruit breaks down and blends with the sweetener.

  2. Let the fruit mixture cool completely.

  3. Puree the SCOBY in a blender.

  4. Combine the SCOBY puree with the fruit mixture and blend until smooth. Add kombucha if the mixture is too thick—it should resemble applesauce.

  5. Spread the mixture onto a lined dehydrator tray (about ¼ inch thick).

  6. Dehydrate at the lowest setting for 8–12 hours, or until the fruit leather is dry and no longer sticky. (Drying time may vary.)

  7. Cut into strips and roll for easy snacking.

Notes

  • No dehydrator? You can use your oven instead. Set it to the lowest temperature and prop the door open slightly. Be sure to check the leather periodically. If the heat is too high, the probiotics will be destroyed.

  • Store the fruit leather in an airtight container.
